Rice Loaf

Ingredients

  • 2 cups uncooked brown rice
  • 1 cup chopped broccoli
  • ½ -1 cup chopped Zucchini
  • 1 chopped red, orange or yellow pepper
  • 1 chopped carrot
  • 1 small onion chopped
  • 2 cloves of garlic chopped
  • 2 tablespoons Parsley
  • ¼ teaspoon Kelp Granules (can use salt)
  • 1 tsp dill

Directions

  1. Cook the rice in a steamer or on the stove. Put Flax meal in a small bowl and then add hot water. Mix and let sit. Sautee vegetables add spices and Coconut Aminos and cashews and sauté for about another minute or two. Put cooked rice in large bowl; add sautéed veggies and flax mixture. Stir well. Grease a loaf pan and add rice mixture. Sprinkle the top with a few cashews/almonds. Pour a thin layer of red sauce over the top. Bake into the oven at 375 for about 25-30 minutes.

    When done let cool for about 5 minutes in pan. While it is cooling heat up some more red sauce on a pan on the stove. Slice a piece of rice loaf and put on a plate, top with warmed red sauce. Serve and enjoy.
